Sweet & Sour Cranberry Meatballs

One of our favorite things to do is partner with like-minded companies for giveaways on our social media! In honor of March Frozen Food Month and Women's History Month we sought after another woman owned, frozen food company that cared about sustainability and the environment. We came across Simek's a frozen meatball and lasagna company in Frozen and Refrigerated Buyer Magazine and started to read up on the brand. Turns out, the owner, Lindsey Hickey and Cape Cod Select's Owner, Cindy Rhodes were both awarded Forward Awards for their efforts in the frozen food industry. Not only are both companies lead by tenacious women but both companies are doing their part to support sustainable practices. When we reached out to Simek's for a fun giveaway in March for our followers they were on board. With their meatballs in hand and our frozen cranberries we got to brainstorming a tasty recipe - and so Sweet & Sour Cranberry Meatballs were made!

Ingredients

  • 2 Cups Pineapple Juice
  • 1 Cup Apple Cider Vinegar
  • 6 Tbsp. Soy Sauce (we used low sodium)
  • 1 1/2 Cups Brown Sugar
  • 1/4 Cup Honey
  • 16oz Cape Cod Select Frozen Cranberries (1 bag)
  • 2lbs Simek’s Meatballs (we used Turkey but great with Beef as well!)

Directions

  1. In a medium sized pot bring all ingredients (except meatballs) to a boil. Reduce heat and let simmer for 15 minutes or until cranberries start to pop.
  2. Remove from heat and set aside.
  3. Set your slow cooker to high and add 2lbs of meatballs.
  4. Pour Cranberry Sweet and Sour Sauce over the meatballs and stir to coat.
  5. Let slow cooker cook on high for 2 hours or on low for 4 hours stirring occasionally.
  6. Once meatballs are heated through they’re ready to serve.
