Prepare the Cranberry Chutney
- In a saucepan, combine 1 cup of cranberries, 1/4 cup of honey, and 1/2 cup of orange juice. Heat the mixture until it’s well combined and heated through.
- Add Cape Cod Select cranberries to the saucepan.
- Simmer the mixture over medium heat, stirring occasionally, until the cranberries have cooked through and the chutney has thickened slightly. This should take about 10-15 minutes.
- Remove the saucepan from heat and let the cranberry chutney cool to room temperature.
Prepare the Brie Bites
- Cut the brie cheese into small bite-sized pieces.Place the brie pieces in the freezer to chill until you’re ready to assemble the bites.
Prepare the Puff Pastry
- Roll out the defrosted puff pastry sheets on a lightly floured surface. Cut the puff pastry into squares, making sure they are large enough to fit into your muffin pan.
Assemble the Cranberry Chutney Brie Bites
- Preheat your oven to 400°F (200°C).
- Grease a muffin pan or use muffin liners.
- Place one puff pastry square into each muffin cup, allowing the corners to extend slightly over the edges.
- Add a chilled brie bite into the center of each puff pastry square.
- Top each brie bite with a spoonful of the homemade cranberry chutney.
Bake
- Place the muffin pan in the preheated oven and bake for approximately 20 minutes or until the puff pastry turns a light golden color and appears puffy.
Finish and Serve
- Once out of the oven, garnish each Cranberry Chutney Brie Bite with a sprinkle of chopped nuts for a delightful crunch and a pinch of sea salt to enhance the flavors.
- Allow the bites to cool slightly before serving.
