Directions

  1. Preheat oven to 350℉.
  2. Whisk butter (softened or melted), eggs, and almond flavoring in mixing bowl.
  3. Slowly add flour and sugar until a batter begins to form. Add 3 cups of Cape Cod Select® cranberries. Berries may be fresh or frozen with no thawing or slicing necessary.
  4. Fold batter until cranberries are covered in batter.
  5. Spray 13 X 9 baking pan with cooking spray.
  6. Once prepared spread batter evenly in pan and bake at 350℉ for 1 hour. If you like your edges crispy, let it bake until the top is completely golden brown.

Notes

  • Do not thaw cranberries. Thawed cranberries will break and bleed into the batter and make it pink!
  • Hand mix the batter for a denser square, like a brownie. If you want a more cake-like square use an electric hand mixer.
