Cranberry Muffins

When in doubt, bake muffins! Everyone loves a tasty muffin! Great for on the go breakfast, a mid day snack with a cup of coffee, or an after dinner treat.

Ingredients

  • 2 eggs room temperature
  • 1 cup white granulated sugar
  • 1/3 cup vegetable oil
  • 1 cup sour cream
  • 2 3/4 cup all purpose flour
  • 1 tsp baking powder
  • 1 1/2 cup frozen cranberries
  • 1 Tbsp orange zest
  • pinch of salt
  • sparkling sugar for topping (optional)

Directions

  1. In a large bowl add eggs, sugar, vegetable oil, sour cream and mix together.
  2. Add siffted flour and baking powder.
  3. Coat frozen cranberries (keep frozen) with a dash of flour and fold into the batter.
  4. Add orange zest and salt, mix once more.
  5. Scoop batter into prepared muffin tin with liners.
  6. Sprinkle sparkling sugar on top of each muffin. (optional)
  7. Bake at 350F for 20-25min
  8. Allow to cool and enjoy!
