Cranberry Jalapeno Poppers

We were invited to a super bowl party last year and needed a good appetizer to bring. After searching online for "super bowl appetizers" we noticed a lot of jalapeno popper recipes so we thought, why not try adding cranberries? If you haven't noticed, we try adding cranberries to everything to see what works! These came out so good. The whole tray got eaten and they look great too! We love the bright pink color the cranberries and goat cheese make. Grab a bag of frozen cranberries on your next grocery store run and try making a batch yourself!

Ingredients

  • 1 cup Cape Cod Select Frozen Cranberries
  • 1 tbsp. Orange zest
  • 1/2 cup fresh squeezed orange juice
  • 2 tbsp. honey
  • 8oz goat cheese
  • 10 jalapeños (seeds and veins removed)
  • 1/4 cup panko bread crumbs
  • 1 tbsp. olive oil
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees and prepare a baking tray with parchment paper.
  2. In a small sauce pan over medium heat, combine cranberries, orange zest, orange juice and honey. Let mixture come to a boil and allow cranberries to soften. Reduce heat to low and let simmer for 5-8 minutes until mixture is reduced. Remove from heat and allow to cool a bit.
  3. Slice jalapenos in half (remove seeds and veins) and place on baking sheet.
  4. Pour cranberry mixture into a medium sized mixing bowl with softened goat cheese. Mix to combine with a hand mixer.
  5. Spread cranberry and goat cheese mixture into sliced jalapeños.
  6. In a small bowl, mix bread crumbs, olive and salt and pepper. Sprinkle mixture on top of jalapeños.
  7. Bake for 20 minutes.
  8. Allow to cool before serving.
