Ingredients
- 1 cup Cape Cod Select Frozen Cranberries
- 1 tbsp. Orange zest
- 1/2 cup fresh squeezed orange juice
- 2 tbsp. honey
- 8oz goat cheese
- 10 jalapeños (seeds and veins removed)
- 1/4 cup panko bread crumbs
- 1 tbsp. olive oil
- Salt and pepper to taste

Directions
- Preheat oven to 400 degrees and prepare a baking tray with parchment paper.
- In a small sauce pan over medium heat, combine cranberries, orange zest, orange juice and honey. Let mixture come to a boil and allow cranberries to soften. Reduce heat to low and let simmer for 5-8 minutes until mixture is reduced. Remove from heat and allow to cool a bit.
- Slice jalapenos in half (remove seeds and veins) and place on baking sheet.
- Pour cranberry mixture into a medium sized mixing bowl with softened goat cheese. Mix to combine with a hand mixer.
- Spread cranberry and goat cheese mixture into sliced jalapeños.
- In a small bowl, mix bread crumbs, olive and salt and pepper. Sprinkle mixture on top of jalapeños.
- Bake for 20 minutes.
- Allow to cool before serving.
