Ingredients
- 2 eggs room temperature
- 1 cup white granulated sugar
- 1/3 cup vegetable oil
- 1 cup sour cream
- 2 3/4 cup all purpose flour
- 1 tsp baking powder
- 1 1/2 cup frozen cranberries
- 1 Tbsp orange zest
- pinch of salt
- sparkling sugar for topping (optional)

Directions
- In a large bowl add eggs, sugar, vegetable oil, sour cream and mix together.
- Add siffted flour and baking powder.
- Coat frozen cranberries (keep frozen) with a dash of flour and fold into the batter.
- Add orange zest and salt, mix once more.
- Scoop batter into prepared muffin tin with liners.
- Sprinkle sparkling sugar on top of each muffin. (optional)
- Bake at 350F for 20-25min
- Allow to cool and enjoy!
